While you can always buy a jar at the store, making it fresh at home gives you full control over the flavor, ingredients, and texture.

  • 1 egg (room temperature)
  • 1 cup vegetable oil (or sunflower/canola oil)
  • 1 tbsp vinegar or lemon juice
  • ½ tsp salt

Step 1: Combine Ingredients
In a tall cup or blender jar, add the egg, vinegar or lemon juice, salt, and mustard.

Step 2: Add the Oil
Pour in the oil gently. Let it sit so the egg settles at the bottom.

Step 3: Blend
Use an immersion blender and hold it at the bottom of the jar. Blend for 10 seconds without moving, then slowly lift the blender to emulsify the whole mixture.

Step 4: Adjust & Store
Taste and adjust salt, lemon, or mustard. Store in an airtight container in the fridge for up to 1 week.
